Broccoli Chicken Casserole

Last night I made Broccoli Chicken Casserole, which I have been meaning to make for awhile, but never got around to it. Overall, I'd say it is a good freezer meal, to make ahead, or in a pinch on a busy day. The recipe is not the best. My kids liked it, and it was flavorful, but not my favorite. However, you might like it, so don't take my review to heart until you have tried it yourself. I am a pretty picky eater though, and I felt it was missing that "special something".

Broccoli Chicken Casserole

INGREDIENTS
6 skinless, boneless chicken breast halves
1 pound broccoli florets, cooked
2 (10.75 ounce) can condensed cream of chicken soup
3/4 cup milk (I use fat free)
2 cup shredded Cheddar cheese
1 box dry stuffing mix


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).


Boil chicken until tender and shred or cut into bite size pieces. Meanwhile, steam broccoli until crisp but tender.
In a small bowl mix together the soup and milk. Set aside.
In a 9x13 inch baking dish layer the chicken, broccoli, soup mixture, and cheese. Sprinkle dry stuffing mix over the top and bake in the preheated oven for 25-30
minutes

I think it was missing something. I am thinking if I make it again I might use one less chicken breast and instead of boiling the chicken, sautee it with some garlic and onion. It was a little bland, but I didnt feel like tweaking the recipe last night.

I noticed it didn't have any seasonings of any kind either...maybe a bit of salt and pepper too. I like the sauteeing in garlic and onion idea too.

I think my kids would really go for that. But like you, I think I'd want to jazz it up a bit. Maybe a sprinkle or two of chili powder and garlic powder.
